- 1 cup unsalted butter, softened
- 1 1/4 cups sugar
- 4 large eggs
- 1 cup whole milk
- 1/3 cup honey
- 2 tsp vanilla extract
- 1 cup unsalted butter (for buttercream)
- 3–4 cups powdered sugar
- 1/4 cup honey (for buttercream)
- 2–3 tbsp heavy cream (as needed)
- Pinch of salt (for buttercream)
- 1 cup sugar (for honeycomb candy)
- 1/4 cup honey (for candy)
- 1/4 cup golden syrup or corn syrup
- 1 1/2 tsp baking soda
Instructions
- Preheat oven to 350°F (175°C). Grease and line cake pans.
- In a bowl, whisk flour, baking powder, and salt.
- Cream butter and sugar until light. Beat in eggs, honey, and vanilla.
- Alternate adding dry ingredients and milk, mixing until smooth.
- Divide batter into pans and bake 25–30 minutes. Let cool completely.
- To make buttercream, beat butter until fluffy. Gradually add powdered sugar, then honey and salt. Add cream as needed for texture.
- For honeycomb, heat sugar, honey, and syrup in a saucepan without stirring until golden. Remove from heat, whisk in baking soda quickly, and pour into a lined pan. Let cool, then break into shards.
- Assemble cake by layering with buttercream. Frost outside of cake.
- Decorate with honeycomb shards and optional honey drizzle or gold leaf.

- Add lemon zest to batter or frosting for brightness.
- Brown the butter for a nutty flavor in the frosting.
- Infuse cake with chamomile or Earl Grey for floral notes.
