Description

Honeycomb Layer Cake is a striking dessert made with tender vanilla-honey sponge layers, rich honey buttercream frosting, and crisp golden honeycomb candy shards. It’s a showstopping centerpiece ideal for special occasions.


Ingredients

  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 1/4 cups sugar
  • 4 large eggs
  • 1 cup whole milk
  • 1/3 cup honey
  • 2 tsp vanilla extract
  • 1 cup unsalted butter (for buttercream)
  • 34 cups powdered sugar
  • 1/4 cup honey (for buttercream)
  • 23 tbsp heavy cream (as needed)
  • Pinch of salt (for buttercream)
  • 1 cup sugar (for honeycomb candy)
  • 1/4 cup honey (for candy)
  • 1/4 cup golden syrup or corn syrup
  • 1 1/2 tsp baking soda

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line cake pans.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. Cream butter and sugar until light. Beat in eggs, honey, and vanilla.
  4. Alternate adding dry ingredients and milk, mixing until smooth.
  5. Divide batter into pans and bake 25–30 minutes. Let cool completely.
  6. To make buttercream, beat butter until fluffy. Gradually add powdered sugar, then honey and salt. Add cream as needed for texture.
  7. For honeycomb, heat sugar, honey, and syrup in a saucepan without stirring until golden. Remove from heat, whisk in baking soda quickly, and pour into a lined pan. Let cool, then break into shards.
  8. Assemble cake by layering with buttercream. Frost outside of cake.
  9. Decorate with honeycomb shards and optional honey drizzle or gold leaf.

Notes

  • Add lemon zest to batter or frosting for brightness.
  • Brown the butter for a nutty flavor in the frosting.
  • Infuse cake with chamomile or Earl Grey for floral notes.
  • Use cream cheese for a tangier frosting variation.
