Description

Sweet, savory, and delightfully tender, these Honey Glazed Drumsticks paired with roasted vegetables make for a wholesome meal that’s perfect for weeknight dinners or relaxed weekend gatherings. The glaze caramelizes on the drumsticks while infusing the veggies with a luscious shine.


Ingredients

  • 812 chicken drumsticks (skin-on)
  • 2 tbsp olive oil
  • 1/4 cup honey
  • 2 tbsp soy sauce or tamari
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated (optional)
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • For the roasted vegetables:
  • 2 cups baby potatoes or diced regular potatoes
  • 2 carrots, cut into sticks
  • 1 bell pepper, sliced
  • 1 zucchini or 1.5 cups broccoli florets
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1 tsp dried thyme or rosemary
  • Salt & pepper to taste

Instructions

  1. In a bowl, whisk together honey, soy sauce, garlic, ginger (if using), paprika, salt, and pepper. Add drumsticks and toss to coat. Marinate for 15–30 minutes or overnight.
  2. Preheat oven to 200°C (400°F). On a baking sheet, toss prepared vegetables with olive oil, garlic powder, dried herbs, salt, and pepper. Spread in a single layer.
  3. Place drumsticks on one side of the sheet, skin-side up. Bake for 25 minutes.
  4. Remove sheet from oven. Brush drumsticks with reserved marinade or fresh glaze, and toss veggies. Return to oven and bake for another 15–20 minutes until chicken reaches 75°C (165°F) and veggies are tender and caramelized.
  5. Let chicken rest for 5 minutes. Serve alongside veggies and spoon pan juices over both.

Notes

  • Pat chicken dry before marinating to help glaze adhere.
  • Cut veggies uniformly for even roasting.
  • Stir vegetables halfway for even caramelization.
  • Broil for 2 minutes at the end for crispier skin.
  • Reserve marinade separately to avoid cross-contamination when basting later.
