- 8–12 chicken drumsticks (skin-on)
- 2 tbsp olive oil
- 1/4 cup honey
- 2 tbsp soy sauce or tamari
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated (optional)
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- For the roasted vegetables:
- 2 cups baby potatoes or diced regular potatoes
- 2 carrots, cut into sticks
- 1 bell pepper, sliced
- 1 zucchini or 1.5 cups broccoli florets
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1 tsp dried thyme or rosemary
- Salt & pepper to taste
Instructions
- In a bowl, whisk together honey, soy sauce, garlic, ginger (if using), paprika, salt, and pepper. Add drumsticks and toss to coat. Marinate for 15–30 minutes or overnight.
- Preheat oven to 200°C (400°F). On a baking sheet, toss prepared vegetables with olive oil, garlic powder, dried herbs, salt, and pepper. Spread in a single layer.
- Place drumsticks on one side of the sheet, skin-side up. Bake for 25 minutes.
- Remove sheet from oven. Brush drumsticks with reserved marinade or fresh glaze, and toss veggies. Return to oven and bake for another 15–20 minutes until chicken reaches 75°C (165°F) and veggies are tender and caramelized.
- Let chicken rest for 5 minutes. Serve alongside veggies and spoon pan juices over both.

- Pat chicken dry before marinating to help glaze adhere.
- Cut veggies uniformly for even roasting.
- Stir vegetables halfway for even caramelization.
- Broil for 2 minutes at the end for crispier skin.
- Reserve marinade separately to avoid cross-contamination when basting later.
