- 8 chicken drumsticks
- 3 tbsp olive oil, divided
- 1/4 cup honey
- 2 tbsp soy sauce
- 1 tbsp Dijon mustard
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 cups baby potatoes, halved
- 2 cups carrots, sliced
- 1 red bell pepper, chopped
- 1 red onion, cut into wedges
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with foil or parchment paper.
- In a small bowl, whisk together honey, soy sauce, Dijon mustard, garlic, 1 tbsp olive oil, smoked paprika, salt, and pepper.
- Place drumsticks in a large bowl and pour half the glaze over them. Toss to coat and let marinate while prepping vegetables.
- In another bowl, toss potatoes, carrots, bell pepper, and red onion with remaining 2 tbsp olive oil and a pinch of salt and pepper.
- Spread the vegetables evenly on the baking sheet. Nestle the drumsticks among the veggies.
- Brush remaining glaze over the drumsticks.
- Bake for 40–45 minutes, flipping drumsticks halfway through, until chicken is cooked through (165°F/74°C) and veggies are tender.
- Broil for 2–3 minutes at the end for a caramelized finish if desired.
- Remove from oven and let rest 5 minutes before serving.

- Use a meat thermometer to ensure chicken is fully cooked.
- Swap in seasonal veggies like zucchini or squash if desired.
- Line the pan for easy cleanup and to prevent sticking.
