Description

Honey Glazed Drumsticks & Veggies is a hearty and wholesome one-pan meal featuring tender chicken drumsticks roasted with colorful vegetables, all coated in a sweet and savory honey glaze.


Ingredients

  • 8 chicken drumsticks
  • 3 tbsp olive oil, divided
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 cups baby potatoes, halved
  • 2 cups carrots, sliced
  • 1 red bell pepper, chopped
  • 1 red onion, cut into wedges

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with foil or parchment paper.
  2. In a small bowl, whisk together honey, soy sauce, Dijon mustard, garlic, 1 tbsp olive oil, smoked paprika, salt, and pepper.
  3. Place drumsticks in a large bowl and pour half the glaze over them. Toss to coat and let marinate while prepping vegetables.
  4. In another bowl, toss potatoes, carrots, bell pepper, and red onion with remaining 2 tbsp olive oil and a pinch of salt and pepper.
  5. Spread the vegetables evenly on the baking sheet. Nestle the drumsticks among the veggies.
  6. Brush remaining glaze over the drumsticks.
  7. Bake for 40–45 minutes, flipping drumsticks halfway through, until chicken is cooked through (165°F/74°C) and veggies are tender.
  8. Broil for 2–3 minutes at the end for a caramelized finish if desired.
  9. Remove from oven and let rest 5 minutes before serving.

  • Use a meat thermometer to ensure chicken is fully cooked.
  • Swap in seasonal veggies like zucchini or squash if desired.
  • Line the pan for easy cleanup and to prevent sticking.
