Description

Honey Glazed Drumsticks and Veggies is a wholesome one-pan meal featuring juicy chicken drumsticks coated in a sweet and savory honey glaze, roasted alongside tender, caramelized vegetables.


Ingredients

  • 8 chicken drumsticks
  • 2 tbsp olive oil
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper to taste
  • 3 carrots, peeled and cut into chunks
  • 2 potatoes, cut into chunks
  • 1 red onion, cut into wedges
  • 1 zucchini, sliced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with foil or parchment paper.
  2. In a small bowl, whisk together honey, soy sauce, Dijon mustard, vinegar, garlic, paprika, salt, and pepper to make the glaze.
  3. Place the drumsticks in a large bowl or zip-top bag and coat with half of the glaze. Let marinate for at least 15 minutes if time allows.
  4. Spread the chopped vegetables on the prepared baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  5. Arrange the drumsticks over the vegetables. Brush with some of the remaining glaze.
  6. Bake for 35-45 minutes, turning drumsticks once and brushing with more glaze halfway through, until chicken is cooked through and veggies are tender.
  7. Garnish with fresh parsley and serve warm.

  • Marinate drumsticks longer for deeper flavor if time permits.
  • Use other seasonal vegetables like bell peppers or sweet potatoes.
  • Line the pan for easier cleanup.
