- 4 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 3 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- In a small bowl, whisk together honey, soy sauce, Dijon mustard, garlic, thyme, and rosemary to create the glaze.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the chicken thighs, skin-side down, for 4–5 minutes until golden and crispy. Flip and cook another 2 minutes.
- Pour the glaze over the chicken and spoon some over the top to coat.
- Transfer the skillet to the preheated oven and roast for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Spoon the pan sauce over the chicken before serving and garnish with fresh parsley.
Notes
- Use boneless thighs if preferred, but reduce cooking time accordingly.
- Fresh herbs can be substituted with 1/2 tsp dried versions.
- Serve with roasted vegetables, rice, or a simple salad.
- The glaze can be doubled for extra sauce.
