Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
 - In a large bowl, toss carrot sticks with olive oil, paprika, garlic powder, salt, and pepper.
 - Spread the carrots in a single layer on the prepared baking sheet.
 - Roast for 20–25 minutes, flipping halfway through, until golden and slightly crisp on the edges.
 - While carrots roast, prepare the garlic dipping sauce: in a small bowl, mix Greek yogurt or sour cream with mayonnaise, minced garlic, and lemon juice until smooth.
 - Serve the hot carrot fries with the garlic dipping sauce on the side.
