Instructions
- Peel and finely grate or chop the fresh ginger.
- In a saucepan, combine ginger, sugar (or honey), and water.
- Bring to a boil, then reduce heat and simmer for 10–15 minutes.
- Remove from heat and let steep for 15–30 minutes for a stronger flavor.
- Strain the syrup through a fine mesh sieve and let cool to room temperature.
- To serve, fill a glass with ice and add 2–3 tablespoons of ginger syrup.
- Add a splash of lemon or lime juice.
- Top with chilled sparkling water or club soda and stir gently.
- Garnish with citrus slices if desired.
