Description

  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • Green gel food coloring
  • 1/2 cup powdered sugar (for coating)
  • 1/4 cup raspberry jam (for accents)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together cake mix, eggs, oil, vanilla extract, and green food coloring until a soft dough forms and color is evenly distributed.
  3. Roll dough into 1-inch balls, then roll each ball in powdered sugar to coat thoroughly.
  4. Place coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  5. Using your thumb or the back of a spoon, gently press a small indentation in the center of each ball.
  6. Bake for 10–12 minutes, until cookies are puffed and crinkled but still soft in the center.
  7. Remove from oven and immediately spoon a small amount of raspberry jam into the center of each cookie.
  8. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
