Ingredients
Scale
- 1 box white cake mix
- 2 large eggs
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- Green gel food coloring
- 1/2 cup powdered sugar (for coating)
- 1/4 cup raspberry jam (for accents)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together cake mix, eggs, oil, vanilla extract, and green food coloring until a soft dough forms and color is evenly distributed.
- Roll dough into 1-inch balls, then roll each ball in powdered sugar to coat thoroughly.
- Place coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Using your thumb or the back of a spoon, gently press a small indentation in the center of each ball.
- Bake for 10–12 minutes, until cookies are puffed and crinkled but still soft in the center.
- Remove from oven and immediately spoon a small amount of raspberry jam into the center of each cookie.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use gel food coloring for a more vibrant green without altering the dough’s texture.
- Let cookies cool fully before storing to keep the powdered sugar from dissolving.
- Store in an airtight container for up to 4 days or refrigerate for longer freshness.
