- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- Red and green colored sanding sugar
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add the egg and vanilla extract, and beat until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until a soft dough forms.
- Roll dough into 1-inch balls and roll each ball in red or green sanding sugar.
- Place on prepared baking sheets, spacing about 2 inches apart.
- Flatten each ball slightly with the bottom of a glass or your fingers.
- Bake for 10–12 minutes, or until the edges are just starting to turn golden.
- Cool on baking sheet for 5 minutes, then transfer to wire racks to cool completely.
Notes
- Make sure butter is fully softened for easy mixing.
- Do not overbake to maintain the soft texture.
- Try mixing red and green sugar on a few cookies for a fun twist.
