Description

The Herb-Stuffed Chicken Breast Roast is an elegant yet comforting dish made by stuffing boneless chicken breasts with a rich mixture of cream cheese and fresh herbs, then searing and roasting to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp fresh parsley, finely chopped
  • 2 tbsp fresh basil, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp fresh dill, finely chopped
  • 2 garlic cloves, minced
  • 4 oz cream cheese, softened
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine cream cheese with parsley, basil, chives, dill, and garlic. Mix well.
  3. Place the chicken breasts on a cutting board and carefully slice a pocket into each breast without cutting through.
  4. Fill each pocket with the herb mixture and secure with toothpicks if needed.
  5. Season the outside of the chicken breasts with salt and pepper.
  6. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 2-3 minutes per side until golden brown.
  7. Transfer the skillet to the oven and roast for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  8. Remove from oven and let rest for 5 minutes. Slice and serve warm.

Notes

  • Use toothpicks to prevent stuffing from leaking during cooking.
  • Goat cheese or ricotta can be substituted for cream cheese.
  • Chopped sun-dried tomatoes or sautéed spinach can be added to the stuffing.
  • Secure tightly and avoid overstuffing to maintain shape.
  • Monitor internal temperature to prevent overcooking.
