The Herb-Stuffed Chicken Breast Roast is an elegant yet comforting dish made by stuffing boneless chicken breasts with a rich mixture of cream cheese and fresh herbs, then searing and roasting to perfection.

- 4 boneless, skinless chicken breasts
- 2 tbsp fresh parsley, finely chopped
- 2 tbsp fresh basil, finely chopped
- 1 tbsp fresh chives, finely chopped
- 1 tbsp fresh dill, finely chopped
- 2 garlic cloves, minced
- 4 oz cream cheese, softened
- Salt, to taste
- Black pepper, to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine cream cheese with parsley, basil, chives, dill, and garlic. Mix well.
- Place the chicken breasts on a cutting board and carefully slice a pocket into each breast without cutting through.
- Fill each pocket with the herb mixture and secure with toothpicks if needed.
- Season the outside of the chicken breasts with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 2-3 minutes per side until golden brown.
- Transfer the skillet to the oven and roast for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
- Remove from oven and let rest for 5 minutes. Slice and serve warm.
Notes
- Use toothpicks to prevent stuffing from leaking during cooking.
- Goat cheese or ricotta can be substituted for cream cheese.
- Chopped sun-dried tomatoes or sautéed spinach can be added to the stuffing.
- Secure tightly and avoid overstuffing to maintain shape.
