- 2 pork shoulder steaks (about 1 inch thick)
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme leaves
- 2 cloves garlic, minced
- Salt and black pepper to taste
- 1.5 lbs baby potatoes, halved
- 2 tbsp butter
- 2 cloves garlic, minced (for potatoes)
- 1 tbsp chopped fresh parsley
- 1 tbsp olive oil (for potatoes)
Instructions
- In a small bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper.
- Rub the herb mixture over the pork steaks and let marinate for at least 30 minutes (or overnight in the fridge for more flavor).
- Boil halved baby potatoes for 10–12 minutes or until fork-tender. Drain and set aside.
- Preheat grill or grill pan over medium-high heat. Grill pork steaks for 4–5 minutes per side or until internal temperature reaches 145°F (63°C). Let rest for 5 minutes.
- Meanwhile, heat butter and 1 tbsp olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds until fragrant.
- Add cooked potatoes and toss to coat in garlic butter. Cook 2–3 minutes to crisp slightly, then sprinkle with chopped parsley.
- Serve grilled pork steaks with garlic butter potatoes on the side.
Notes
- Use boneless pork chops if preferred, adjusting cook time as needed.
- For added depth, add a splash of lemon juice or balsamic glaze to the pork before serving.
- Yukon gold or red potatoes work well for the side.
- Double the garlic butter for extra richness if desired.
