Ingredients

  • 1 1/2 lbs pork tenderloin
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 2 tsp garlic, minced
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 12 oz green beans, trimmed
  • 1 tbsp olive oil (for green beans)
  • Salt and pepper to taste (for green beans)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, Dijon mustard, garlic, rosemary, thyme, salt, and pepper to make the herb paste.
  3. Rub the herb mixture all over the pork tenderloin.
  4. Place the pork on a lined baking sheet or in a roasting pan.
  5. Roast in the oven for 20–25 minutes, or until internal temperature reaches 145°F (63°C). Let rest for 5–10 minutes before slicing.
  6. While pork is roasting, toss green beans with olive oil, salt, and pepper.
  7. Spread green beans on a baking sheet and roast for 12–15 minutes, until tender-crisp and slightly browned.
  8. Slice pork and serve with the roasted green beans.
