- 4 cod fillets (about 6 oz each)
- 1 cup fresh breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh chives, chopped
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- Lemon wedges, for serving
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a bowl, combine the breadcrumbs, parsley, dill, chives, garlic, lemon zest, salt, pepper, and olive oil. Mix well until evenly moistened.
- Pat the cod fillets dry with paper towels. Spread a thin layer of Dijon mustard on the top of each fillet.
- Press the herb breadcrumb mixture onto the mustard-coated side of each fillet, gently pressing to adhere.
- Place the cod fillets on the prepared baking sheet, crust-side up.
- Bake for 12–15 minutes, or until the fish flakes easily with a fork and the crust is golden and crisp.
- Serve immediately with lemon wedges on the side.
Notes
- Use panko breadcrumbs for an extra crispy crust.
- Substitute dried herbs if fresh are unavailable, using one-third the amount.
- This recipe pairs well with roasted vegetables or a green salad.
