For the Chicken & Gravy:

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup (or extra cream of chicken)
  • 2 cups chicken broth
  • 1 packet (1 oz) dry ranch seasoning mix
  • 1 packet (1 oz) dry onion soup mix
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional)

For Thickening the Gravy:

  • 2 tbsp cornstarch
  • 3 tbsp cold water

For Serving:

  • Mashed potatoes, rice, or biscuits
  • Fresh parsley, chopped (for garnish)

Instructions

Slow Cook the Chicken:

  1. Prepare the Slow Cooker – Place chicken in the slow cooker.
  2. Mix the Sauce – In a bowl, whisk together cream of chicken soup, cream of mushroom soup, chicken broth, ranch seasoning, onion soup mix, garlic powder, black pepper, and smoked paprika. Pour over the chicken.
  3. Cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is tender and easily shredded.

Thicken the Gravy:

  1. Shred the Chicken – Remove the chicken, shred it with two forks, and return it to the slow cooker.
  2. Make a Slurry – In a small bowl, mix cornstarch and cold water until smooth. Stir into the slow cooker and let cook for 15 more minutes, until the gravy thickens.

Serve & Enjoy:

  1. Serve Hot – Ladle chicken and gravy over mashed potatoes, rice, or biscuits. Garnish with fresh parsley.

Notes

  • For a richer flavor, add ½ cup heavy cream at the end.
  • Swap chicken breasts for chicken thighs for extra tenderness.
  • Use a rotisserie chicken to save time—just mix it with the gravy and cook for 1 hour on LOW.
