For the Chicken & Gravy:
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup (or extra cream of chicken)
- 2 cups chicken broth
- 1 packet (1 oz) dry ranch seasoning mix
- 1 packet (1 oz) dry onion soup mix
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika (optional)
For Thickening the Gravy:
- 2 tbsp cornstarch
- 3 tbsp cold water
For Serving:
- Mashed potatoes, rice, or biscuits
- Fresh parsley, chopped (for garnish)
Instructions
Slow Cook the Chicken:
- Prepare the Slow Cooker – Place chicken in the slow cooker.
- Mix the Sauce – In a bowl, whisk together cream of chicken soup, cream of mushroom soup, chicken broth, ranch seasoning, onion soup mix, garlic powder, black pepper, and smoked paprika. Pour over the chicken.
- Cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is tender and easily shredded.
Thicken the Gravy:
- Shred the Chicken – Remove the chicken, shred it with two forks, and return it to the slow cooker.
- Make a Slurry – In a small bowl, mix cornstarch and cold water until smooth. Stir into the slow cooker and let cook for 15 more minutes, until the gravy thickens.
