Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until fragrant.
- Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
- Add carrots, celery, and bell pepper to the pot and sauté for 3–4 minutes.
- Stir in diced tomatoes, beef broth, dried thyme, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat and let the stew simmer uncovered for 30–40 minutes, or until vegetables are tender and flavors meld.
- Remove bay leaf, adjust seasoning if needed, and serve hot garnished with fresh parsley.
