  • 4 cups beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until fragrant.
  2. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  3. Add carrots, celery, and bell pepper to the pot and sauté for 3–4 minutes.
  4. Stir in diced tomatoes, beef broth, dried thyme, bay leaf, salt, and pepper. Bring to a boil.
  5. Reduce heat and let the stew simmer uncovered for 30–40 minutes, or until vegetables are tender and flavors meld.
  6. Remove bay leaf, adjust seasoning if needed, and serve hot garnished with fresh parsley.
