A robust, comforting chili loaded with ground beef, beans, tomatoes, and warm spices—slow-simmered for deep, hearty flavour.

- 1 lb (450 g) ground beef
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup beef broth
- 2 tbsp tomato paste
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and bell pepper, cooking until softened.
- Stir in garlic and cook for 1 minute.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in chili powder, cumin, smoked paprika, oregano, salt, pepper, and cayenne.
- Add tomato paste, diced tomatoes, beans, and beef broth. Mix well.
- Bring to a simmer, then reduce heat to low.
- Cover and cook for 30–40 minutes, stirring occasionally, until thickened and flavourful.
- Adjust seasoning and serve hot.
Notes
- For richer depth, simmer for up to 1 hour.
- Top with cheese, sour cream, or green onions if desired.
- Can be made ahead and tastes even better the next day.
