Ingredients

Units Scale
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup whole wheat flour or all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup coconut oil or unsalted butter, softened
  • 1/2 cup brown sugar or coconut sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans
  • 1/2 cup semi-sweet or dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together oats, flour, baking soda, and salt.
  3. In another bowl, cream together coconut oil (or butter) and sugar until smooth.
  4. Beat in eggs and vanilla extract until well combined.
  5. Gradually mix in dry ingredients until a dough forms.
  6. Fold in chopped pecans and chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing evenly.
  8. Bake for 10–12 minutes, or until edges are golden brown.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Substitute pecans with walnuts or almonds for variety.
  • Add dried cranberries or raisins for extra texture and flavor.
  • Use flax eggs and dairy-free chocolate chips for a vegan version.
  • Store in an airtight container for up to 5 days or freeze for up to 3 months.
  • To make cookies crispier, bake slightly longer and flatten dough before baking.
