Description

Ground Beef, Zucchini & Butternut Squash Skillet is a colorful, one-pan dish combining savory beef, sweet butternut squash, and fresh zucchini. It’s quick, hearty, and perfect for a nutritious, low-carb meal.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 cups butternut squash, peeled and diced
  • 2 medium zucchinis, sliced into half-moons
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning or dried thyme
  • 2 tablespoons fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
  2. Stir in chopped onion and garlic. Cook for 2–3 minutes until fragrant and softened.
  3. Add diced butternut squash and cook for 7–8 minutes, stirring occasionally.
  4. Add sliced zucchini and continue cooking until vegetables are tender, about 5–6 more minutes.
  5. Season with salt, pepper, paprika, and Italian seasoning. Stir to combine and adjust seasoning to taste.
  6. Garnish with chopped parsley or cilantro and serve warm.
