- 1 tablespoon olive oil
- 1 yellow onion, chopped
- 2 cloves garlic, minced
- 2 cups butternut squash, peeled and diced
- 2 medium zucchinis, sliced into half-moons
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 teaspoon Italian seasoning or dried thyme
- 2 tablespoons fresh parsley or cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
- Stir in chopped onion and garlic. Cook for 2–3 minutes until fragrant and softened.
- Add diced butternut squash and cook for 7–8 minutes, stirring occasionally.
- Add sliced zucchini and continue cooking until vegetables are tender, about 5–6 more minutes.
- Season with salt, pepper, paprika, and Italian seasoning. Stir to combine and adjust seasoning to taste.
- Garnish with chopped parsley or cilantro and serve warm.
