- 1 lb ground beef
- 1 yellow bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 2 cloves garlic, minced
- Salt and black pepper, to taste
Instructions
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Add minced garlic, salt, and pepper to the beef. Cook for 1–2 more minutes. Set aside to cool slightly.
- While the beef cooks, dice the bell pepper, chop the onion, halve the cherry tomatoes, and slice the cucumber.
- In a large bowl, combine all the chopped vegetables.
- Add the slightly cooled ground beef and chopped parsley to the bowl.
- Drizzle with olive oil and red wine vinegar. Toss gently until everything is evenly coated.
- Adjust salt and pepper to taste. Serve immediately or refrigerate for later use.
