Description

Ground Beef Mediterranean Salad is a vibrant and protein-rich salad combining seasoned ground beef with fresh vegetables and a light vinaigrette. It’s perfect for nutritious meals, meal prep, or quick lunches.


Ingredients

  • 1 lb ground beef
  • 1 yellow bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste

Instructions

  1. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  2. Add minced garlic, salt, and pepper to the beef. Cook for 1–2 more minutes. Set aside to cool slightly.
  3. While the beef cooks, dice the bell pepper, chop the onion, halve the cherry tomatoes, and slice the cucumber.
  4. In a large bowl, combine all the chopped vegetables.
  5. Add the slightly cooled ground beef and chopped parsley to the bowl.
  6. Drizzle with olive oil and red wine vinegar. Toss gently until everything is evenly coated.
  7. Adjust salt and pepper to taste. Serve immediately or refrigerate for later use.
