- 1 lb ground beef
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chopped kale, stems removed
- 1 cup cherry tomatoes, halved (optional)
- 1/2 cup beef broth
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/4 tsp crushed red pepper flakes (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Add ground beef to the skillet. Cook until browned, breaking it apart with a spoon.
- Season with paprika, oregano, salt, pepper, and red pepper flakes if using.
- Add chopped kale and stir until it begins to wilt.
- Pour in beef broth and cherry tomatoes. Stir, cover, and let simmer for 5–7 minutes until kale is tender.
- Uncover and cook another 2 minutes to evaporate excess liquid if needed.
- Serve warm as-is, over rice, or with crusty bread.
Notes
- Use spinach instead of kale for a softer texture.
- Add cooked rice or quinoa directly to the skillet to make it a complete one-pan meal.
- A splash of soy sauce or Worcestershire sauce can deepen the flavor.
