Description

These Grilled Stuffed Potatoes are packed with rich, creamy filling, topped with grilled tomatoes and cheese, and finished with fresh herbs. A smoky and delicious twist on baked potatoes, perfect for grilling season!


Ingredients

For the Potatoes:

  • 4 large russet potatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Filling:

  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp butter, melted
  • 2 tbsp fresh chives, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika

For the Topping:

  • 2 tomatoes, sliced
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1/2 tsp Italian seasoning

Instructions

  1. Prepare the Potatoes:
    • Preheat the grill to medium-high heat.
    • Wash potatoes and pierce them with a fork.
    • Rub with olive oil, salt, and black pepper.
    • Wrap in foil and grill for 40-45 minutes, flipping halfway through, until tender.
  2. Make the Filling:
    • Slice potatoes in half and scoop out some of the flesh into a bowl.
    • Mix with sour cream, cheddar cheese, melted butter, chives, garlic powder, and smoked paprika.
  3. Stuff & Grill Again:
    • Fill potato skins with the creamy mixture.
    • Top with tomato slices and sprinkle with Parmesan cheese.
    • Drizzle with olive oil and sprinkle Italian seasoning on top.
    • Place back on the grill for 10 minutes until cheese is melted and tomatoes are slightly charred.
  4. Serve & Enjoy:
    • Garnish with fresh herbs and serve hot!

Notes

  • Use sweet potatoes for a healthier alternative.
  • Add crumbled bacon or grilled chicken for extra protein.
  • Bake in the oven at 400°F if a grill isn’t available.
