For the Potatoes:
- 4 large russet potatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
For the Filling:
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 2 tbsp butter, melted
- 2 tbsp fresh chives, chopped
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
For the Topping:
- 2 tomatoes, sliced
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1/2 tsp Italian seasoning
Instructions
- Prepare the Potatoes:
- Preheat the grill to medium-high heat.
- Wash potatoes and pierce them with a fork.
- Rub with olive oil, salt, and black pepper.
- Wrap in foil and grill for 40-45 minutes, flipping halfway through, until tender.
- Make the Filling:
- Slice potatoes in half and scoop out some of the flesh into a bowl.
- Mix with sour cream, cheddar cheese, melted butter, chives, garlic powder, and smoked paprika.
- Stuff & Grill Again:
- Fill potato skins with the creamy mixture.
- Top with tomato slices and sprinkle with Parmesan cheese.
- Drizzle with olive oil and sprinkle Italian seasoning on top.
- Place back on the grill for 10 minutes until cheese is melted and tomatoes are slightly charred.
- Serve & Enjoy:
- Garnish with fresh herbs and serve hot!
Notes
- Use sweet potatoes for a healthier alternative.
- Add crumbled bacon or grilled chicken for extra protein.
- Bake in the oven at 400°F if a grill isn’t available.
