- 2 bell peppers (red, yellow, or green), sliced
- 1 large onion, sliced
- 1 tbsp olive oil

- 4 sandwich rolls or hoagie buns

- Optional: mustard, mayo, or marinara sauce for serving
Instructions
- Preheat grill to medium heat. Lightly oil the grates.
- In a grill basket or foil packet, toss sliced peppers and onions with olive oil, salt, and pepper. Grill for 10–12 minutes, stirring occasionally, until soft and slightly charred.
- Grill sausages for 12–15 minutes, turning occasionally, until cooked through and nicely browned.
- Toast the sandwich rolls on the grill for 1–2 minutes until golden.
- To assemble, place a sausage in each roll and top with grilled peppers and onions.
- Add cheese or condiments if desired. Serve hot.
