- 4 boneless, skinless chicken breasts
- 1 cup barbecue sauce
- 4 pineapple rings (fresh or canned)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: chopped fresh cilantro or green onions for garnish
Instructions
- Preheat grill to medium-high heat and lightly oil the grates.
- Season chicken breasts with salt and pepper.
- Brush chicken with olive oil and place on the grill.
- Grill chicken for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C).
- During the last few minutes of cooking, brush chicken generously with barbecue sauce.
- While chicken cooks, grill pineapple rings for 2–3 minutes per side, until caramelized grill marks appear.
- Top each chicken breast with a grilled pineapple ring.
- Remove from grill and let rest for 5 minutes.
- Garnish with cilantro or green onions if desired and serve warm.
Notes
- Use a smoky or spicy BBQ sauce to add more depth of flavor.
- Fresh pineapple gives the best caramelization but canned works too.
- Great served with rice, grilled veggies, or a fresh salad.
