Description

These Grilled Lamb Chops are juicy, tender, and packed with flavor from a simple yet aromatic herb marinade. Perfectly grilled to perfection, they pair beautifully with mashed potatoes or roasted vegetables for an elegant meal.

Ingredients

Scale

For the Lamb Chops:

  • 8 lamb chops (rib or loin)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1 tbsp lemon juice

For Garnish:

  • 1 tbsp fresh parsley, chopped
  • Lemon wedges

Instructions

  • Marinate the Lamb Chops:
    • In a bowl, mix olive oil, garlic, rosemary, thyme, salt, black pepper, smoked paprika, and lemon juice.
    • Coat lamb chops in the marinade and let them sit for at least 30 minutes (or up to 4 hours for deeper flavor).
  • Grill the Lamb Chops:
    • Preheat the grill to medium-high heat.
    • Grill lamb chops for 3-4 minutes per side for medium-rare or 5-6 minutes for medium doneness.
  • Rest & Serve:
    • Let the lamb chops rest for 5 minutes before serving.
    • Garnish with fresh parsley and serve with lemon wedges.

Notes

  • Serve with mashed potatoes, grilled vegetables, or a fresh salad.
  • Substitute rosemary with oregano for a Mediterranean twist.
  • Let the lamb come to room temperature before grilling for even cooking.
