			- 4 boneless, skinless chicken breasts
 - 3 tablespoons olive oil
 - 3 cloves garlic, minced
 - 1 tablespoon lemon juice
 - 1 teaspoon dried oregano
 - 1 teaspoon dried thyme
 - Salt and pepper to taste
 - 2 cups cherry tomatoes, halved
 - 1/4 red onion, thinly sliced
 - 2 tablespoons fresh basil, chopped
 - 1 tablespoon balsamic vinegar
 - 1 tablespoon olive oil (for salad)
 
Instructions
- In a bowl, mix olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper.
 - Pound chicken breasts to even thickness and coat with marinade. Let sit for at least 20 minutes (or up to 2 hours).
 - Preheat grill or grill pan to medium-high heat.
 - Grill chicken for 5–6 minutes per side or until fully cooked and internal temperature reaches 165°F (75°C).
 - While chicken cooks, combine cherry tomatoes, red onion, basil, balsamic vinegar, and olive oil in a bowl. Toss gently and season with salt and pepper.
 - Serve grilled chicken alongside or over the tomato salad. Garnish with extra herbs if desired.
 
Notes
- Chicken can also be pan-seared if a grill isn’t available.
 - Use heirloom tomatoes for more color and flavor variety.
 - Marinate overnight for maximum flavor.
