Description

Grilled Cilantro Lime Chicken with Avocado and Rice is a vibrant, satisfying meal that features juicy marinated chicken, creamy avocado, and fluffy rice. It’s zesty, nourishing, and perfect for meal prep or outdoor grilling.

Ingredients

Units Scale
  • 4 boneless, skinless chicken breasts or thighs
  • 3 tbsp olive oil
  • 1/4 cup fresh lime juice
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp honey (optional)
  • Salt and black pepper to taste
  • 2 cups cooked white or brown rice
  • 2 avocados, sliced
  • Optional toppings: lime wedges, chopped green onions, sliced jalapeños

Instructions

  1. In a bowl, whisk together olive oil, lime juice, garlic, cilantro, honey (if using), salt, and pepper to create the marinade.
  2. Place chicken in a resealable bag or shallow bowl. Pour marinade over the chicken and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat grill or grill pan over medium-high heat. Grill chicken for 5–7 minutes per side or until cooked through and juices run clear.
  4. While the chicken cooks, prepare rice according to package instructions and slice the avocados.
  5. Assemble each bowl or plate with a portion of rice, grilled chicken, and avocado slices.
  6. Garnish with lime wedges, green onions, or jalapeños if desired. Squeeze additional lime juice over the top before serving.

Notes

  • Use cauliflower rice for a low-carb version.
  • Marinated chicken can be frozen before cooking for up to 2 months.
  • Add grilled vegetables, black beans, or corn for extra texture and flavor.
  • Bake at 400°F for 20–25 minutes if you don’t have a grill.
  • Cilantro can be swapped with parsley or basil if preferred.
