			- 4 boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 12 ounces green beans, trimmed
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Lemon wedges for serving (optional)
Instructions
- Preheat grill to medium-high heat.
- In a large bowl, toss the potatoes with 1 tablespoon of olive oil, salt, pepper, and half of the garlic, thyme, and rosemary.
- Place potatoes in a grill basket or wrap in foil and grill for 15–20 minutes, turning occasionally, until tender and golden.
- Meanwhile, season chicken breasts with remaining olive oil, garlic, thyme, rosemary, salt, and pepper.
- Grill chicken for 6–8 minutes per side, or until internal temperature reaches 165°F (75°C).
- While chicken is grilling, steam or blanch green beans for 3–4 minutes until just tender, then toss with a little olive oil, salt, and pepper.
- Serve grilled chicken with roasted potatoes and green beans. Garnish with lemon wedges if desired.
Notes
- Marinate the chicken in the seasoning for 30 minutes for extra flavor.
- Baby red or Yukon gold potatoes work well in this recipe.
- Add a sprinkle of parmesan over the green beans for a flavor boost.
