Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked white or brown rice
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup lime juice (about 2 limes)
  • 1/4 cup sour cream or Greek yogurt
  • 1 clove garlic
  • 1/4 cup olive oil (for sauce)
  • Salt and pepper to taste (for sauce)

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Rub this mixture onto both sides of the chicken breasts.
  3. Grill chicken for 5-7 minutes per side or until fully cooked and internal temperature reaches 165°F (75°C).
  4. While chicken is grilling, prepare the cilantro lime sauce. In a blender or food processor, combine cilantro, lime juice, sour cream (or Greek yogurt), garlic, olive oil, salt, and pepper. Blend until smooth.
  5. Serve the grilled chicken over a bed of rice and drizzle generously with the cilantro lime sauce.
  6. Garnish with extra cilantro and lime wedges if desired.

  • Marinate chicken in the spice rub for 30 minutes before grilling for extra flavor.
