- Wooden or metal skewers

Instructions
- In a bowl, whisk together olive oil, lemon juice and zest, garlic, oregano, salt, and pepper to make the marinade.
- Cut the chicken into 1-inch cubes and toss in the marinade. Cover and refrigerate for at least 1 hour (up to 24 hours for more flavor).
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated chicken pieces onto skewers, leaving a little space between pieces for even cooking.
- Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is fully cooked and slightly charred.
- Serve hot with tzatziki sauce, pita bread, and a fresh salad or rice.
