Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together olive oil, lemon juice and zest, garlic, oregano, salt, and pepper to make the marinade.
  2. Cut the chicken into 1-inch cubes and toss in the marinade. Cover and refrigerate for at least 1 hour (up to 24 hours for more flavor).
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated chicken pieces onto skewers, leaving a little space between pieces for even cooking.
  5. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is fully cooked and slightly charred.
  6. Serve hot with tzatziki sauce, pita bread, and a fresh salad or rice.

  • Add vegetables like bell peppers or onions for a complete skewer meal.
  • Use fresh lemon juice for best flavor, but bottled can be used in a pinch.
