- 1.5 lbs chicken breast or thighs, cut into 1.5-inch cubes
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Wooden or metal skewers
- Optional: tzatziki sauce, pita bread, cucumber slices, red onions
Instructions
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper to make the marinade.
- Add chicken cubes and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, up to 4 hours.
- If using wooden skewers, soak them in water for 30 minutes before grilling.
- Preheat grill or grill pan over medium-high heat.
- Thread the marinated chicken onto skewers.
- Grill for 10–12 minutes, turning occasionally, until chicken is fully cooked and has charred edges.
- Remove from grill and rest for 5 minutes before serving.
- Serve with pita, tzatziki, and fresh vegetables if desired.

- Chicken thighs yield juicier results and are more forgiving if slightly overcooked.
- Add cayenne pepper or chili flakes to the marinade for a spicy version.
