Description

Grilled Chicken Souvlaki Skewers are Greek-style marinated chicken chunks grilled to juicy perfection and served with fresh sides like pita, tzatziki, and vegetables. A flavorful and simple dish ideal for summer barbecues or easy dinners.


Ingredients

  • 1.5 lbs chicken breast or thighs, cut into 1.5-inch cubes
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Wooden or metal skewers
  • Optional: tzatziki sauce, pita bread, cucumber slices, red onions

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper to make the marinade.
  2. Add chicken cubes and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, up to 4 hours.
  3. If using wooden skewers, soak them in water for 30 minutes before grilling.
  4. Preheat grill or grill pan over medium-high heat.
  5. Thread the marinated chicken onto skewers.
  6. Grill for 10–12 minutes, turning occasionally, until chicken is fully cooked and has charred edges.
  7. Remove from grill and rest for 5 minutes before serving.
  8. Serve with pita, tzatziki, and fresh vegetables if desired.

  • Chicken thighs yield juicier results and are more forgiving if slightly overcooked.
  • Add cayenne pepper or chili flakes to the marinade for a spicy version.
  • Use fresh herbs like rosemary or thyme for extra depth of flavor.
  • Skewers can be baked at 400°F (200°C) for 20–25 minutes if grilling isn’t an option.
