Ingredients

Units Scale
  • 1.5 lbs chicken breasts or thighs, cubed
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Wooden or metal skewers
  • 2 cups cooked rice
  • 1 cup fresh cucumbers or pickled vegetables
  • 1 cup cherry tomatoes or sliced onions
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice (for sauce)
  • 1 garlic clove, minced (for sauce)
  • 2 tbsp chopped parsley or dill (for sauce)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, paprika, cumin, salt, and pepper.
  2. Add chicken cubes, toss to coat, and marinate in the refrigerator for at least 30 minutes.
  3. Thread marinated chicken onto skewers.
  4. Preheat grill to medium-high heat. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through.
  5. For the yogurt sauce, mix Greek yogurt with lemon juice, garlic, and herbs. Stir until combined and chill until ready to serve.
  6. Serve grilled chicken skewers over cooked rice with yogurt sauce and vegetables on the side.

Notes

  • Add vegetables like bell peppers or onions to the skewers for more flavor and color.
  • Use za’atar or harissa to change up the flavor profile.
  • Try with tofu or halloumi for a vegetarian alternative.
  • Substitute rice with bulgur, couscous, or quinoa.
  • For oven cooking, bake at 400°F for 20–25 minutes, turning once.
