- 2 cups cooked rice
- 1 cup fresh cucumbers or pickled vegetables
- 1 cup cherry tomatoes or sliced onions
- 1 cup Greek yogurt
- 1 tbsp lemon juice (for sauce)
- 1 garlic clove, minced (for sauce)
- 2 tbsp chopped parsley or dill (for sauce)
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, paprika, cumin, salt, and pepper.
- Add chicken cubes, toss to coat, and marinate in the refrigerator for at least 30 minutes.
- Thread marinated chicken onto skewers.
- Preheat grill to medium-high heat. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through.
- For the yogurt sauce, mix Greek yogurt with lemon juice, garlic, and herbs. Stir until combined and chill until ready to serve.
- Serve grilled chicken skewers over cooked rice with yogurt sauce and vegetables on the side.
