Ingredients

  • 3 garlic cloves, minced (divided)
  • 1/2 onion, finely chopped
  • 2 tbsp fresh parsley or basil, chopped
  • 1 egg
  • 1/3 cup breadcrumbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for grilling)
  • 2 tbsp butter
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese

Instructions

  1. In a bowl, mix ground chicken, 1 minced garlic clove, chopped onion, parsley, egg, breadcrumbs, salt, and pepper.
  2. Shape the mixture into small meatballs.
  3. Preheat a grill or grill pan and brush with olive oil.
  4. Grill meatballs over medium heat, turning occasionally, for 10–12 minutes until fully cooked and slightly charred.
  5. In a skillet, melt butter and sauté remaining minced garlic until fragrant.
  6. Add chicken broth and bring to a simmer.
  7. Stir in heavy cream and Parmesan cheese. Cook until the sauce thickens.
  8. Add grilled meatballs to the sauce and simmer for 2–3 more minutes.
  9. Serve hot with pasta, rice, or vegetables.
