- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh lemon juice
- 2 cups cooked white or brown rice
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste (for sauce)
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Rub chicken breasts with olive oil, garlic powder, onion powder, salt, pepper, and lemon juice.
- Grill chicken for 5–7 minutes on each side, or until internal temperature reaches 165°F (75°C). Remove from grill and let rest.
- In a skillet, melt butter over medium heat. Add minced garlic and cook for 1–2 minutes until fragrant.
- Stir in chopped thyme, rosemary, and parsley. Season with additional salt and pepper if needed.
- Return grilled chicken to the skillet or spoon the herb butter sauce over the chicken.
- Serve over a bed of cooked rice and drizzle with extra sauce. Garnish with more parsley if desired.
Notes
- Use fresh herbs for best flavor, but dried herbs can be substituted (use 1/3 the amount).
- You can marinate the chicken ahead of time for deeper flavor.
- Add steamed vegetables on the side for a complete meal.
- To make it dairy-free, substitute butter with olive oil or a plant-based alternative.
