Description

Juicy grilled chicken breasts smothered in a rich garlic herb butter sauce, served over fluffy rice for a simple yet flavorful meal perfect for weeknights or special dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 cups cooked white or brown rice
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste (for sauce)

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Rub chicken breasts with olive oil, garlic powder, onion powder, salt, pepper, and lemon juice.
  3. Grill chicken for 5–7 minutes on each side, or until internal temperature reaches 165°F (75°C). Remove from grill and let rest.
  4. In a skillet, melt butter over medium heat. Add minced garlic and cook for 1–2 minutes until fragrant.
  5. Stir in chopped thyme, rosemary, and parsley. Season with additional salt and pepper if needed.
  6. Return grilled chicken to the skillet or spoon the herb butter sauce over the chicken.
  7. Serve over a bed of cooked rice and drizzle with extra sauce. Garnish with more parsley if desired.

Notes

  • Use fresh herbs for best flavor, but dried herbs can be substituted (use 1/3 the amount).
  • You can marinate the chicken ahead of time for deeper flavor.
  • Add steamed vegetables on the side for a complete meal.
  • To make it dairy-free, substitute butter with olive oil or a plant-based alternative.
