- 2 lbs boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 cups cooked white or brown rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup diced tomatoes or salsa
- 1 cup shredded lettuce
- 1 avocado, sliced or diced
- 1/4 cup chopped fresh cilantro
- 1/2 cup shredded cheese (optional)
- 1/4 cup sour cream or Greek yogurt (optional)
- Lime wedges, for serving
Instructions
- In a bowl, mix olive oil, lime juice, chili powder, cumin, garlic powder, paprika, salt, and pepper to create the marinade.
- Place chicken breasts in the marinade and refrigerate for at least 30 minutes (or up to 8 hours).
- Preheat grill or grill pan over medium-high heat.
- Grill chicken for 5–7 minutes per side or until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice.
- To assemble bowls, divide rice among serving bowls.
- Top with sliced chicken, black beans, corn, tomatoes or salsa, lettuce, avocado, and cheese if using.
- Add a dollop of sour cream or Greek yogurt and garnish with cilantro and lime wedges.
Notes
- Use cauliflower rice for a low-carb version.
- Can be meal prepped and stored in containers for up to 4 days.
- Great served warm or cold.
