  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra-virgin olive oil (for dressing)

Instructions

  • Prepare the Chicken:
    • Rub the chicken breasts with olive oil, garlic powder, smoked paprika, salt, and pepper.
    • Preheat the grill or grill pan to medium-high heat.
  • Grill the Chicken:
    • Place the chicken on the grill and cook for 6–8 minutes per side or until the internal temperature reaches 165°F (74°C).
    • Let the chicken rest for 5 minutes before slicing.
  • Assemble the Salad:
    • In a large salad bowl, combine mixed greens, sliced avocado, cherry tomatoes, and red onion.
    • Top with sliced grilled chicken and feta cheese, if using.
  • Prepare the Dressing:
    • Whisk together balsamic vinegar and extra-virgin olive oil. Drizzle over the salad.
  • Serve:
    • Toss gently to combine, and serve immediately.

Notes

  • For added crunch, include roasted nuts or seeds such as almonds or sunflower seeds.
  • Swap feta for goat cheese or leave it out for a dairy-free option.
  • Use your favorite salad greens, such as spinach, arugula, or kale.
