- 1.5 lbs boneless, skinless chicken breasts, cut into 1.5-inch pieces
- 3 bell peppers (red, yellow, green), cut into 1.5-inch pieces
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp smoked paprika
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper to make the marinade.
- Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken and bell pepper pieces alternately onto the skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks.
- Remove from grill and let rest for a few minutes before serving.
Notes
- Can be served with rice, couscous, or pita bread.
- Try adding onions or zucchini for more variety.
- Marinate the chicken overnight for even more flavor.
