Description

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning

For the Alfredo Sauce:

  • 12 oz penne or fettuccine pasta
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg (optional)

For Garnish:

  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Chicken:
    • Preheat grill to medium-high heat.
    • Rub chicken breasts with olive oil, salt, black pepper, garlic powder, and Italian seasoning.
    • Grill for 5-6 minutes per side until cooked through (internal temperature 165°F). Let rest before slicing.
  2. Cook the Pasta:
    • Boil pasta according to package instructions until al dente. Drain and set aside.
  3. Make the Alfredo Sauce:
    • In a pan, melt butter over medium heat and sauté garlic for 1 minute.
    • Pour in heavy cream and chicken broth, then simmer for 3-4 minutes.
    • Stir in Parmesan cheese, salt, black pepper, and nutmeg until smooth.
  4. Combine Everything:
    • Toss the cooked pasta in the Alfredo sauce.
    • Slice the grilled chicken and serve over the pasta.
    • Garnish with fresh parsley and serve hot!
