This delicious Grilled Caprese Sandwich takes the classic Italian Caprese salad and transforms it into a warm, melty masterpiece! With fresh mozzarella, ripe tomatoes, basil, and a drizzle of balsamic, it’s the perfect quick lunch or light dinner packed with fresh flavors.
Ingredients

4 slices of crusty bread (like sourdough or ciabatta)

4 oz fresh mozzarella, sliced

1 large ripe tomato, sliced

Fresh basil leaves

2 tablespoons pesto (optional)

1 tablespoon balsamic glaze

2 tablespoons olive oil or softened butter

Salt and black pepper, to taste
Instructions

Preheat a grill pan or skillet over medium heat.

Spread a thin layer of pesto (if using) on the inside of each slice of bread.

Layer mozzarella slices, tomato slices, and fresh basil on one side of the bread.

Drizzle lightly with balsamic glaze, and sprinkle with salt and black pepper.

Top with the second slice of bread.

Brush the outside of the sandwich with olive oil or softened butter.

Grill the sandwich for 2-3 minutes on each side until the bread is golden and the cheese is melted.

Slice and serve immediately.
Notes

For extra flavor, add a few slices of avocado or a handful of arugula.

Use a panini press if you have one for perfectly even grilling.

Fresh mozzarella works best, but you can use regular mozzarella slices in a pinch.
