Description

Instructions

  1. Combine graham cracker crumbs and melted butter in a bowl. Press into the bottom of a lined 8-inch or 9-inch square pan to form the crust. Chill for 15 minutes.
  2. In another bowl, beat cream cheese or mascarpone until smooth and creamy.
  3. Add sweetened condensed milk, fresh lime juice, and lime zest. Mix until fully combined.
  4. If using, dissolve gelatin in warm water and stir into the filling for a firmer set.
  5. Add green food coloring, if desired, and mix until evenly tinted.
  6. Pour the filling over the chilled crust and smooth the top with a spatula.
  7. Refrigerate for at least 4 hours or until fully set.
  8. Slice into squares or wedges. Top with whipped cream and garnish with lime slices or mint leaves before serving.
