Instructions
- Combine graham cracker crumbs and melted butter in a bowl. Press into the bottom of a lined 8-inch or 9-inch square pan to form the crust. Chill for 15 minutes.
- In another bowl, beat cream cheese or mascarpone until smooth and creamy.
- Add sweetened condensed milk, fresh lime juice, and lime zest. Mix until fully combined.
- If using, dissolve gelatin in warm water and stir into the filling for a firmer set.
- Add green food coloring, if desired, and mix until evenly tinted.
- Pour the filling over the chilled crust and smooth the top with a spatula.
- Refrigerate for at least 4 hours or until fully set.
- Slice into squares or wedges. Top with whipped cream and garnish with lime slices or mint leaves before serving.
