  • 1 boneless turkey breast or pork loin roast (about 34 lbs)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 1/2 cups fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 1/3 cup brown sugar or honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon cornstarch (optional, for thickening)
  • Fresh rosemary or thyme (optional, for garnish)
  • Orange slices (for serving)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat the roast dry and season with salt and pepper.
  3. In an oven-safe skillet or roasting pan, heat olive oil over medium-high heat. Sear roast on all sides until golden brown. Remove from heat.
  4. In a saucepan, combine cranberries, orange juice, zest, brown sugar, garlic, and Dijon mustard. Simmer over medium heat for 10–15 minutes, until cranberries burst and glaze thickens slightly. Optionally, stir in cornstarch mixed with a tablespoon of water to thicken further.
  5. Brush roast with some of the glaze. Transfer to oven and roast for 60–75 minutes (or until internal temperature reaches 165°F for turkey, 145°F for pork), basting with more glaze halfway through.
  6. Remove from oven and let rest for 10 minutes before slicing.
  7. Serve slices with additional glaze spooned over the top. Garnish with fresh herbs and orange slices if desired.

Notes

  • Use orange marmalade if fresh cranberries aren’t available.
  • For added warmth, include a pinch of cinnamon or cloves in the glaze.
  • Fresh rosemary or sage in the roasting pan adds extra depth of flavor.
  • The glaze can be prepared up to 3 days ahead and refrigerated.
  • Searing enhances flavor but can be skipped if needed for convenience.
