Description

Glazed Baby Potatoes with Sesame & Scallions are tender baby potatoes coated in a savory-sweet soy glaze, finished with nutty sesame seeds and fresh scallions. A simple yet flavorful side dish perfect for weeknight dinners or potlucks.


Ingredients

  • 1 lb baby potatoes, halved
  • 1 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger (optional)
  • 1 tbsp toasted sesame seeds
  • 2 scallions, thinly sliced
  • Salt and pepper to taste

Instructions

  1. Boil or steam baby potatoes for 10–12 minutes until just tender. Drain and set aside.
  2. In a large skillet, heat vegetable oil over medium heat. Add garlic (and ginger if using) and sauté for 1 minute.
  3. Add the cooked potatoes and sauté for 2–3 minutes until lightly golden.
  4. In a small bowl, mix soy sauce, honey (or maple syrup), rice vinegar, and sesame oil. Pour over the potatoes.
  5. Cook for another 3–5 minutes, stirring gently to coat potatoes in the glaze. Let the sauce reduce slightly.
  6. Season with salt and pepper to taste.
  7. Sprinkle with sesame seeds and scallions just before serving.

Notes

  • Use maple syrup for a vegan-friendly version.
  • For extra crispness, roast the potatoes instead of boiling before glazing.
  • Pairs well with grilled meats or tofu for a complete meal.
