Description
Gazpacho is a refreshing cold Spanish soup made with fresh raw vegetables, perfect for hot summer days.

- 6 ripe tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 cups tomato juice
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Place chopped tomatoes, cucumber, bell peppers, onion, and garlic in a blender or food processor.
- Blend until smooth, or leave slightly chunky if preferred.
- Add olive oil, red wine vinegar, and tomato juice. Blend again until well combined.
- Season with salt and pepper to taste.
- Chill the gazpacho in the refrigerator for at least 2 hours before serving.
- Serve cold, garnished with fresh herbs if desired.
Notes
- Use the ripest tomatoes you can find for best flavor.
- Can be made a day ahead for deeper flavor development.
- Optionally, strain for a smoother texture.
