Scale
- 1 lb fresh green beans, trimmed
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/4 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- Optional: lemon wedges for serving
Instructions
- Bring a large pot of salted water to a boil. Add green beans and cook for 2–3 minutes until just tender-crisp. Drain and immediately transfer to a bowl of ice water to stop cooking. Drain again and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Add the blanched green beans to the skillet and sauté for 4–5 minutes, stirring occasionally, until heated through and slightly browned.
- Season with salt and pepper to taste.
- Remove from heat and sprinkle with Parmesan cheese.
- Serve immediately with optional lemon wedges for brightness.
Notes
- Use freshly grated Parmesan for the best flavor and texture.
- For extra crunch, skip blanching and sauté raw green beans a bit longer.
- Leftovers can be stored in the fridge and reheated gently in a skillet or microwave.
- Pairs well with roasted meats, pasta, or grain bowls.
