For the Meatloaf:
- 1 lb ground chicken
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (or almond flour for keto)
- 1 egg
- 2 tbsp milk
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp Italian seasoning
- 1/2 tsp onion powder
- 1 tbsp fresh parsley, chopped
For the Topping:
- 1 cup shredded mozzarella cheese
- 1 tbsp butter, melted
- 1 tbsp garlic powder
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Make the meatloaf mixture: In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs (or almond flour), egg, milk, minced garlic, salt, black pepper, Italian seasoning, onion powder, and parsley. Mix until well combined.
- Shape the meatloaf: Form the mixture into small individual loaves or one large loaf and place in the prepared baking dish.
- Bake: Cook for 25-30 minutes until the meatloaf is cooked through (internal temperature of 165°F/74°C).
- Add the topping: Mix melted butter and garlic powder, then brush over the meatloaf. Sprinkle mozzarella cheese on top and return to the oven for another 5-7 minutes, until the cheese is bubbly and golden.
- Garnish with fresh parsley and serve warm.
