Description

This Garlic Parmesan Chicken Meatloaf is a juicy, flavorful twist on traditional meatloaf! Made with ground chicken, Parmesan cheese, and garlic, then topped with melted mozzarella, it’s the ultimate comfort food that’s low-carb and keto-friendly.

For the Meatloaf:

  • 1 lb ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (or almond flour for keto)
  • 1 egg
  • 2 tbsp milk
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1 tbsp fresh parsley, chopped

For the Topping:

  • 1 cup shredded mozzarella cheese
  • 1 tbsp butter, melted
  • 1 tbsp garlic powder
  • 1 tbsp fresh parsley, chopped

Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • Make the meatloaf mixture: In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs (or almond flour), egg, milk, minced garlic, salt, black pepper, Italian seasoning, onion powder, and parsley. Mix until well combined.
  • Shape the meatloaf: Form the mixture into small individual loaves or one large loaf and place in the prepared baking dish.
  • Bake: Cook for 25-30 minutes until the meatloaf is cooked through (internal temperature of 165°F/74°C).
  • Add the topping: Mix melted butter and garlic powder, then brush over the meatloaf. Sprinkle mozzarella cheese on top and return to the oven for another 5-7 minutes, until the cheese is bubbly and golden.
  • Garnish with fresh parsley and serve warm.

  • Use almond flour instead of breadcrumbs for a keto-friendly version.
