Instructions
- In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Rub mixture over lamb chops and let marinate for at least 30 minutes at room temperature or up to 4 hours in the fridge.
- Preheat a heavy skillet or grill pan over medium-high heat. Add a splash of oil if needed.
- Sear lamb chops for 3–4 minutes per side for medium-rare, or adjust time for preferred doneness.
- Optional: Add butter during the last minute and spoon over chops to baste.
- Remove from pan, tent with foil, and let rest for 5 minutes.
- Sprinkle with chopped parsley and drizzle with lemon juice before serving.
