- 1 (3 to 4 lb / 1.4 to 1.8 kg) boneless, skin-on turkey breast
- 4 tbsp unsalted butter, softened
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme, finely chopped
- 1 tbsp fresh parsley, chopped
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1/2 cup chicken broth (for roasting pan)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix softened butter, minced garlic, rosemary, thyme, parsley, lemon zest, salt, pepper, and olive oil until well combined.
- Pat the turkey breast dry with paper towels. Carefully loosen the skin and rub half the garlic herb butter under the skin and the rest over the top.
- Place turkey breast on a rack in a roasting pan. Pour chicken broth into the bottom of the pan.
- Roast for 60–75 minutes, or until a meat thermometer inserted into the thickest part reads 165°F (74°C).
- If desired, broil for 2–3 minutes at the end for extra crispy skin.
- Remove from oven and let rest for 10–15 minutes before slicing. Serve warm with pan juices or gravy.
Notes
- You can substitute dried herbs if needed (use 1 tsp of each dried herb).
- Use bone-in turkey breast for extra flavor, increasing cook time slightly.
- Delicious served with roasted vegetables or mashed potatoes.
