- 6 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish or line with foil.
- In a small bowl, mix olive oil, garlic, thyme, rosemary, oregano, paprika, salt, and pepper.
- Pat chicken thighs dry with paper towels. Rub herb mixture all over the chicken, including under the skin if possible.
- Place chicken in the baking dish skin-side up.
- Bake for 35–45 minutes, or until chicken is golden and internal temperature reaches 165°F (74°C).
- Optional: Broil for the last 2–3 minutes to crisp the skin.
- Garnish with fresh parsley before serving.

- Use boneless thighs for faster cooking—reduce bake time accordingly.
