Scale
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional)
- 2 tbsp olive oil
For the Garlic Butter Sauce:
- 4 tbsp unsalted butter
- 5 garlic cloves, minced
- 1/2 cup chicken broth (or white wine for extra flavor)
- 1 tsp Italian seasoning (or a mix of dried thyme, oregano, and basil)
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice (optional, for a bright flavor boost)
Instructions
. Season and prepare the chicken:
- Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and paprika (if using).
2. Sear the chicken:
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 4-5 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken and set aside.
3. Make the garlic butter sauce:
- In the same skillet, lower the heat to medium and add the butter. Once melted, stir in the minced garlic and cook for about 1 minute until fragrant.
- Pour in the chicken broth (or white wine) and scrape up any browned bits from the bottom of the skillet. Stir in the Italian seasoning. Simmer for 2-3 minutes to reduce slightly.
4. Combine and serve:
- Return the chicken to the skillet, spooning the garlic butter sauce over the top. Cook for another 2-3 minutes to reheat the chicken and let it absorb the flavors.
- Finish with a squeeze of lemon juice and sprinkle with fresh parsley. Serve hot.
Notes
- For extra richness, add a splash of heavy cream to the garlic butter sauce.
- This dish pairs wonderfully with mashed potatoes, steamed vegetables, or pasta.
- If using chicken thighs instead of breasts, adjust the cooking time as needed since they may take slightly longer.
