For the Granola Base:
- 1 1/2 cups granola
- 2 tbsp honey or maple syrup
- 2 tbsp melted coconut oil or butter
For the Yogurt Layer:
- 1 1/2 cups Greek yogurt (plain or flavored)
- 2 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
For the Topping:
- Fresh berries (raspberries, blueberries, strawberries)
- Extra granola for garnish
Instructions
- Prepare the Granola Base:
- In a bowl, mix granola, honey, and melted coconut oil.
- Press a spoonful of the granola mixture into the bottom of a lined muffin tin or silicone mold.
- Freeze for 10 minutes to set.
- Make the Yogurt Layer:
- In another bowl, mix Greek yogurt, honey, and vanilla extract.
- Spoon the yogurt mixture over the granola base, filling each cup.
- Add Toppings & Freeze:
- Top with fresh berries and a sprinkle of granola.
- Freeze for at least 2 hours or until fully set.
- Serve & Enjoy:
- Let sit for 5 minutes before serving to slightly soften.
- Enjoy cold as a snack, breakfast, or dessert!
