- 1/4 cup almond butter (or peanut butter)
- 3–4 tablespoons honey (adjust sweetness to taste)
- 1 teaspoon vanilla extract
- 1 1/2 cups Greek yogurt (plain or flavored)
- Fresh berries for topping (blueberries, strawberries, raspberries, etc.)
Instructions
- Make the Granola Base:
- In a medium bowl, mix the oats, cinnamon, almond butter, honey, and vanilla extract until fully combined. The mixture should hold together when pressed. If it’s too dry, add more almond butter or honey.
- Prepare the Muffin Pan:
- Line a muffin tin with 8–10 paper or silicone liners. Scoop about 1 tablespoon of the granola mixture into each cup and press it firmly into the bottom to form a sturdy base.
- Add the Yogurt Layer:
- Spoon 1–2 tablespoons of Greek yogurt over the granola base in each cup, spreading it evenly.
- Top with Berries:
- Add fresh berries of your choice on top of the yogurt layer. Press them lightly to secure.
- Freeze the Cups:
- Place the muffin tin in the freezer and freeze for at least 4 hours, or until the yogurt is firm.
- Serve and Enjoy:
- Let the cups thaw for 2–3 minutes at room temperature before serving. Remove the liners and enjoy as a snack or breakfast.
